Serve it Safe!
Your family’s health and safety are important to us, and when it comes to food, you can never be too safe.  We’ve compiled the following safety guidelines to use when preparing and storing food.  Simple steps like washing hands and refrigerating foods take little time, but are so important-- not only for the safety of your food, but also for the quality.

Keep it cold.  Your refrigerator temperature should be set at 40°F so that food inside is kept cold enough.  A refrigerator thermometer will help.
Beware of cross-contamination. Cross-contamination is how bacteria spread from one food product or surface to another.  This is especially true for raw meat, poultry and seafood. Keep these foods and their juices away from other foods. Food borne illness can also occur when kitchen equipment is not thoroughly washed between uses.  Always wash surfaces and cooking equipment (including knives, cutting boards, utensils and counter tops), in hot, soapy water before and after food preparation, as well as between preparation of different food items. If possible, use one cutting board for raw meat products and another for salads and other foods.

Always wash hands with hot, soapy water before and after food preparation, as well as when you’re handling raw animal products such as raw eggs or meat.

Safely dispose of paper towels used to clean up kitchen surfaces.  If using cloth towels, wash them often in the hot cycle of the washing machine.  Be sure to also dispose of used food packaging in the trash safely away from children and pets.

Store food cautiously. Keep raw meat, poultry and seafood on the bottom shelf of the refrigerator so juices don’t drip onto other foods.

Never thaw or marinate food on the kitchen counter. Thaw in the refrigerator, under cold running water, or in the microwave.

Keep raw and cooked foods separate. Never place cooked food on a plate that previously held raw meat, poultry or seafood.

When cooking in a microwave oven, be sure there are no cold spots in food where bacteria can survive. For best results, cover food, stir and rotate for even cooking.

Cook to proper temperatures. Bacteria thrive in the danger zone: 40°F – 140°F. Always serve perishable foods colder than 40°F or warmer than 140°F.

For meat, use a meat thermometer, which measures the internal temperature of cooked meat and poultry, to make sure that the meat is cooked all the way through.

• Cook roasts and steaks to at least 145°F.

• Cook ground meat to at least 160°F, and never eat ground beef that is still pink inside.

• Cook poultry to 180°F.

• Cook fish until it is opaque and flakes easily with a fork.

• Bring sauces, soups and gravy to a boil when reheating.

Refrigerate leftovers promptly, as refrigeration slows bacterial growth.  You should also separate large amounts of food into smaller containers for quicker cooling.  Don’t over-stuff the refrigerator, as cold air must circulate to keep food safe.

Though this all may seem like a lot to keep in mind, these steps will become second nature in no time, and they will make all the difference in the world.  Keep your food safe for your family’s health and for your own peace of mind.
