White Bean and Sausage Cassoulet

This hearty winter meal is filling and low in calories.

Ingredients:

1 Tbsp. Joe’s Market Extra Virgin Olive Oil
1 package Joe’s Market All Natural Spinach and Feta Chicken Sausage, sliced ¼” thick
2 cloves garlic, chopped
1 19-ounce can Food Club Great Northern Beans, drained and rinsed
32 oz. Food Club reduced-sodium chicken broth
2 14.5-ounce cans Food Club Italian-Style Diced Tomatoes, undrained
1 bunch kale
2 Tbsps. fresh basil, sliced thin
¼ tsp. Black pepper
Joe’s Market Grated Argentinean Parmesan Cheese, for garnish

Directions:

Heat oil in a Dutch oven over medium heat. Add sausage and sauté for about 3 minutes. Add the garlic and cook for 2 minutes more. Add the beans, broth, and tomatoes and their juices. Increase heat to medium-high and bring to a simmer. Fold each kale leaf in half lengthwise and remove the stem by ripping or cutting it. Tear each leaf into bite-sized pieces. Add the kale to the pan and cook, stirring occasionally until wilted, 2 to 3 minutes. Simmer for about 10 minutes or until tomatoes start to break down and liquid reduces slightly. Stir in basil. Remove from heat. Season with salt and pepper and spoon into individual bowls. Sprinkle with grated cheese.

Per serving: 230 calories, 5 g fat, 1 g sat fat, 0 g trans fat, 40 mg cholesterol, 800 mg sodium, 29 g carbohydrate, 8 g fiber, 6 g sugars, 20 g protein. Excellent source of vit. A, vit. C, calcium and iron.
